What are the differences between a three phase electrical panel and a single phase?

My electrician is telling me that I need a new three phase panel to replace a single phase panel, but I have my doubts. What are the basic differences? I suspect that my "single" phase panel can supply three phase as it appears that a three phase HVAC unit is currently supplied by this panel.
